About once a week we try to eat vegetarian. Not only is it healthier as there have been many studies about the effects of eating meat every day, but it is cheaper too. Often, just the idea of vegetarian food can be quite unpalatable let alone the thought of trying to get little ones to eat purely vegetables.
This recipe is a very quick one and quite simple and is a great favourite in our household both with the children and adults alike.
In this case I served them with a sweet chilli rice, but they are also great like a burger in a bun with some salad and some relish.
All you need to do is take out the food processor. Add a tin of drained Oriental Bean Salad, 100g breadcrumbs, 2tbsp sweet chilli sauce, 1 egg and blitz together. Once mixed, mould into burger shapes and chill for about 30 minutes.
Heat the oil in the pan and shallow fry the burgers in about 3tbsp sunflower oil for 3-4 minutes per side until golden brown and piping hot.
Serve! Either in a soft white buttered roll with salad or as I did with Sweet Chilli Rice. The rice recipe was from Jamie's 30 Minute Meals (I did say it was a favourite,). This can be found on the link below.

The added ingredients to the rice really make it more of a meal. A salad on the side of this makes it a refreshing, nutritional dish that really was enjoyed by all!
