Tasty and Simple Chocolate Souffle

Sometimes you just know it is a pudding night and nothing but chocolate will do! With only limited ingredients in the fridge, it is a case of scouring various sources to find something to cook quickly and easily. It may come as a surprise that a 'souffle' in this case, would be the dessert of choice, but it really is easy and quick.

This recipe in particular is great because there is no weighing, you only need 2 bowls and an electric whisk and you cook it in a frying pan in the oven.

All you need is:
  • 4 tbsp Cocoa Powder
  • 4 Eggs separated (I find the easiest way to do this, although a little messy, is to break the egg into your cupped hand letting the white run through your fingers keeping the yolk in your palm)
  • 200ml Double Cream
  • 4tbsp Caster Sugar
  • A little oil
  • 1 or 2 oranges segmented

  1. Preheat the oven to 200 degrees Celsius.
  2. In one bowl whisk the egg whites until stiff peaks form. Continue whisking and slowly add the sugar until you have glossy peaks. 

  3. You can now use the same whisk to mix the cocoa, egg yolks and half of the double cream in another, large bowl.


  4. Fold the egg whites into the egg yolk mixture.
  5. Put a drop of oil into a small, ovenproof, non-stick frying pan, spread it around with a folded piece of kitchen roll. Heat this on the stove top.
  6. Pour the mixture into the pan and pop in the oven for around 10 minutes or until cooked through.
  7. Serve with the rest of the double cream and some slices of orange.
This must be eaten immediately, whilst nice and hot or it will sink, so cook it when you ready to serve. You can dust the top with a little icing sugar if you want it to look especially pretty. You could also try this with ice cream.
