Work night dinners are always tricky. When you are up in the early hours and all busy all day, it is sometimes the only quality time spent together. Everyone arrives home tired and hungry but it is difficult to muster the energy to put something enticing on the table. Here is just one solution that might work and is worth it:
Whilst relaxing the night before, pop a chicken in the oven for a couple of hours. We love a roast, especially chicken, but are not so keen on the splashes of oil all over the oven as it roasts. As a solution to this, it was suggested recently by a friend to put the chicken in a large casserole dish with a lid and roast. If need be you can remove the lid for the last half hour of cooking to brown, but mine browned with the lid on throughout.
Hubby then did some mashed carrots and potatoes, gravy and peas.
This may not be the most awe inspiring dinner, but it was tasty, easy, quick and we all have full bellies. The leftover chicken can also be used later in the week for another dinner, watch this space!
